#Healthy Under 15: Nutritious Clear Chicken Soup with Vegetables

The Swiss weather has a mind of its own, doesn’t it? One day, Bern shimmers with snow, the next, Luzern basks in a springtime glow. These wild swings in temperature can take a toll on your immune system. That’s where my latest recipe comes in, born from a memorable experience caring for my best friend who fell ill during our trip. He battled food poisoning for three weeks, and the only thing he could keep down was my clear chicken soup. Talk about a culinary triumph! #SoupSorceress

Surely, everyone’s been comforted by a bowl of chicken soup when feeling under the weather. It’s the universal language of care!  But in Europe, I found chicken soups often lean toward the creamy side, delicious but perhaps too rich when you’re feeling delicate.

Inspired by childhood memories and my newfound role as soup-slinging savior, I’m sharing a pure nourishment recipe.  This clear chicken soup is a warm embrace for your tummy, bursting with soothing and restoration ingredients. Let’s get cooking – it’ll be way more satisfying than feeling under the weather!

Some ingredients are missing, but it taste almost the same :

Cost-Effective Measurements:

  • Chicken (preferably chicken thight) (500g): CHF 7.85 (Source: Aldi)
  • Garlic (4 Cloves): CHF 0.20 (Source: Aldi)
  • Ginger (one thumb-sized piece) : CHF 0.50 (Source: Coop)
  • Onion (1 medium): CHF 0.40 (Source: Coop)

  • Carrots (2 medium): CHF 0.70 (Source: Aldi)
  • Broccoli (250g):CHF 1.80  (Source: Aldi)
  • Potatoes (3 medium): CHF 0.80 (Source: Aldi)

  • Spring onions : CHF 0.50 (Source: Coop)
  • Cinnamon Powder
  • Nutmeg Powder
  • Broth powder
  • Salt (a pinch)
  • Black pepper

Method for Cooking:

  • Begin by boiling the chicken for three minutes. Drain the water, then add fresh water and bring to a boil once more.
  • Prepare your aromatics while the chicken is coming to its second boil. Crush three cloves of garlic and a piece of ginger, then finely chop one onion.
  • For the vegetables, clean and trim the carrots and cut them to your liking. Dice one potato and cut the broccoli into your preferred size. Also, chop some onion leaves for garnishing.
  • Add the garlic, onion, and ginger to the pot with the boiling chicken.
  • Enhance the flavor by stirring in two teaspoons of cinnamon powder, three teaspoons of nutmeg powder, and two teaspoons of black pepper.
  • When the chicken is almost tender, add the carrots and let them cook until they are slightly soft, about five minutes. Follow with the potatoes, cooking for another five minutes.
  • Near the end of cooking, add the broccoli and let it cook just until tender.
  • Serve the stew hot, garnished with the freshly chopped onion leaves.

This dish is delightfully warm and nourishing, making it an ideal choice for those feeling under the weather or combating the flu. It’s rich in proteins, carbohydrates, and vitamins. Enhance this meal further by adding rice or glass noodles. Both ginger and garlic not only add robust flavors but also provide significant anti-inflammatory benefits. Additionally, this recipe is particularly mindful of health concerns as it contains no added oils, which helps keep the calorie count low. Priced at approximately CHF 13 for three servings, it amounts to just CHF 4.50 per person. Each serving, weighing around 300 grams, contains about 290-300 calories, making it an outstanding option for those attentive to both their health and budget.
