Cook with Me for Less than 5 Francs

I know that living in Switzerland can be expensive, and cooking often seems like a costly task, especially for students. But I would like to show you that it is actually possible to eat well without spending a fortune!

Welcome to the first episode of Cook with me for less than 5 francs, and today, we’re doing even better with a meal that costs less than 4 CHF! I’m sharing a delicious recipe featuring carrots, chickpeas, ricotta, feta, all sourced from Aldi (aka our best friend when it comes to budget-friendly cooking). Let’s get started!

Ingredients

  • 2-3 carrots (approx. 0.6 CHF)
  • 1 can of chickpeas (1.05 CHF)
  • 1/2 block of feta (0.9 CHF)
  • 1/2 tub of ricotta (0.8 CHF)
  • Drizzle of honey (approx. 0.12 CHF)
  • Olive oil, paprika, salt & pepper (pantry essentials)

Instructions

  1. Prepare the carrots: Slice the carrots lengthwise and place them on a baking tray. Drizzle with olive oil, season with sea salt and pepper, and add a touch of honey. Roast at 200°C for 10 minutes.
  2. Season the chickpeas: While the carrots are roasting, drain and rinse the chickpeas. Toss them with a little olive oil, paprika, and salt. After the carrots have roasted for 10 minutes, add the chickpeas to the tray and roast everything for another 20 minutes.
  3. Make the cheese sauce: In a bowl, mix half of the feta with half of the ricotta. Add a small drizzle of honey. If you have a blender, blend until smooth. Otherwise, mash everything with a fork until well combined.
  4. Assemble the dish: Spread the creamy cheese mixture on a plate. Top with the roasted carrots and chickpeas. Garnish with fresh herbs (if available) and finish with a final drizzle of honey.
