Swiss Mac and Cheese: A Delicious Älplermagronen Recipe 🧀🇨🇭

Today, I’m trying a new format on my blog called “Cook with me“. I want to share some classic Swiss recipes that I know you’ll love. Our first dish? Delicious Älplermagronen, aka Swiss mac and cheese.🇨🇭It’s perfect for cheese lovers and super easy to make – I’ll walk you through it step by step. Let’s get cooking!😋

Preparation and Cooking Time ⏲️ Around 35 minutes
Servings 🍽️
Difficulty Level 👩🏼‍🍳 Easy – ⭐⭐⭐☆☆

🧀 Ingredients:

  • 500g potatoes, peeled and diced
  • 250g Pasta (e.g. Älplermagronen)
  • 2 onions, finely chopped
  • 2 cloves of garlic, minced
  • 200g grated cheese (Gruyère and Emmental)
  • 200ml heavy cream (Halbrahm in German)
  • 2 tablespoons butter
  • Salt and pepper to taste
  • Optional: crispy fried onions & applesauce for garnish


👩🏼‍🍳 Preparation:

  1. Prepare the potatoes: In a large pot of salted boiling water, cook the diced potatoes until fork-tender. Once cooked, drain the potatoes and set them aside.
  2. Cook the pasta: In the same pot of boiling water, cook the pasta according to package instructions until al dente. Drain and set aside.
  3. Sauté the onions and garlic: In a large skillet or pan, melt the butter over medium heat. Add the chopped onions and minced garlic, and sauté until softened and fragrant.
  4. Combine the potatoes, pasta, and onions: Add the boiled potatoes, fried onions and garlic to the pasta. Mix well, allowing the flavors to meld together.
  5. Add the cheese and cream: Gradually sprinkle the grated cheese over the potato and pasta mixture, stirring continuously until the cheese is melted and creamy. Pour in the heavy cream, stirring until well incorporated. Season with salt and pepper to taste.
  6. Serve hot: Transfer the Älplermagronen to a serving dish and garnish with crispy fried onions & applesauce, if desired.
