Some are barely remembered, some get a polite scoop, and then there’s this creamy, herby, a touch sweet from the slow-cooked onion magic, and topped with a spicy swirl of chili oil… this isn’t just a dip. It’s a perfection! Spread it over toasted bruschetta and suddenly you’ve got a perfect deep or a lazy lunch.

🍷 Wine Pairing: Sauvignon Blanc

This dip balances richness (from yogurt and caramelized onion) with zesty brightness (lemon, garlic, herbs). A Sauvignon Blanc’s zingy acidity and citrusy-herbal profile complements all these layers—especially if you add chili oil, which the wine helps to refresh between bites. It’s crisp enough to handle the spice, yet aromatic enough to match the herbs. Win-win.

The Recipe

Ingredients

  • 1 onion, finely chopped

  • Olive oil or butter (or both!) for caramelizing

  • 1 cup plain yogurt (full-fat preferred)

  • ¼ cup chopped fresh parsley

  • ¼ cup chopped fresh basil

  • ¼ cup chopped fresh chives

  • ½ tsp onion powder

  • ½ tsp dried basil

  • ½ tsp garlic powder

  • 1 tbsp olive oil

  • Squeeze of lemon juice

  • Sea salt & black pepper to taste

  • Optional toppings:

    • Chili oil (drizzled on top)

    • Crispy bacon bits

    • Toasted nuts or seeds

Instructions

  1. Caramelize the onion
    Heat olive oil or butter in a skillet over medium heat. Add chopped onions and a pinch of salt. Lower the heat and cook slowly for 10–15 minutes, stirring often, until the onions are deep golden and jammy. Let them cool.

  2. Mix the dip
    In a bowl, combine yogurt, caramelized onions, fresh herbs, garlic powder, seasoning, olive oil, and lemon juice. Stir until creamy and well blended.

  3. Taste and tweak
    Adjust salt or lemon juice if needed. Want more garlic or herbs? Go for it.

  4. Top and serve
    Drizzle with chili oil. And if you’re feeling fancy or you want to eat this a dinner add crispy bacon or toasted nuts. Serve immediately or refrigerate—it gets even better with time.

Serves 4 (or 2 if you’re spooning it straight off toast).

Serving Suggestion: Make It a Meal!

Spoon generously over toasted bruschetta or crusty bread. Add a salad or glass of wine, and just like that, you’ve got yourself a laid-back dinner.
