Crispy Garlicky Spinach Bites – Wine & Bite

There’s something special about the earthy smell that rain brings out — and this recipe captures that mood perfectly: think spinach and mushrooms with their own earthy flavors, topped with melted, golden cheese and a touch of garlic. You’re going to love it. Just don’t forget to pop open a bottle of Chasselas and let it chill in the fridge before you get started!

🍷 Why it pairs wonderfully with Chasselas:

Chasselas is a light, dry white wine from Switzerland, known for its delicate acidity, subtle floral notes, and mineral freshness.
Here’s why it’s a match made in heaven:

  • The buttery, garlicky spinach and mushroom base needs a wine that refreshes the palate — and Chasselas does just that.

  • Its light body won’t overpower the nuanced flavor of the sautéed veggies.

  • And those hints of white flower and citrus cut through the richness of the melted cheese, making each bite feel lighter and brighter.

 

🎯Tips & Tricks:

Sauté onions slowly: Cooking onions on low heat brings out their natural sweetness — a perfect match for the delicate notes of Chasselas wine.

Drain the spinach well: After sautéing, make sure to squeeze out any excess moisture so your topping isn’t watery and soggy.

Pre-toast the bread: Give the baguette slices a quick toast in the oven (3–4 minutes) before adding the topping. This keeps the base crispy.

Boost vegan flavor: Using a plant-based cheese? Add a bit of nutritional yeast for that “parmesan-like” umami kick.

Broil just before serving: Pop them under the broiler for 1–2 minutes right before serving for a golden, bubbly top. Watch closely — they burn fast!

Don’t overchill your Chasselas: Serve it at around 8–10°C (let it sit for 5–10 minutes after taking it out of the fridge) to enjoy its full aroma. Too cold and you’ll mute the flavor.

🛒 Ingredients

For the topping:

  • 2 tbsp butter (or olive oil for vegan version)

  • 3 garlic cloves, minced

  • ½ medium sweet yellow onion, finely diced

  • 5 mushrooms, chopped

  • ½ tsp red pepper flakes

  • 1 tsp kosher salt

  • ½ tsp black pepper

  • 16 oz (about 450g) fresh baby spinach

  • ⅓ cup Italian breadcrumbs

  • ⅓ cup shredded mozzarella

  • ⅓ cup grated parmesan

  • 6 tbsp olive oil

  • 1 baguette, sliced into rounds

To sprinkle on top:

  • ⅔ cup finely shredded mozzarella

  • ¼ cup grated parmesan

🍳 Instructions

  1. Preheat your oven to 425°F (220°C).

  2. In a large pan, melt butter and sauté garlic and onion for 2–3 minutes, until soft and translucent.

  3. Add the mushrooms, red pepper flakes, salt, and pepper. Cook for another 2–3 minutes until mushrooms are tender and fragrant.

  4. Toss in the spinach (a handful at a time if needed), and sauté until fully wilted — about 2–3 mins. Then stir in the breadcrumbs.

  5. Transfer everything into a bowl and let it cool slightly while you prep your baguette slices on two baking sheets (9×13”). Drizzle with olive oil (3 tbsp per tray).

  6. Once the veggie mix is slightly cooled, stir in the shredded mozzarella and parmesan. Scoop small mounds onto each slice of bread.

  7. Finish with a sprinkle of extra mozzarella and parmesan.

  8. Bake until golden and crispy — about 10–12 minutes. Serve warm!
