Spicy Salmon Sushi Bites 

Ingredients
🍚 2 cups of medium grain white rice (sushi rice)
🐟 1 pound of salmon, cubed
🧂 2 tbsp sesame oil
🥢 1 tbsp soy sauce
🍯 1 tbsp honey
🧄 2 cloves garlic, minced
🧅 ¼ cup green onions, chopped
🌶️ Onion powder & paprika (to taste)
🌊 Nori / seaweed sheets, cut into squares
🥑 1 avocado, thinly sliced
🔥 Pickled jalapeños (optional, for extra heat!)

For the spicy mayo:
🥄 ¼ cup mayo
🌶️ Sriracha (as much as your spicy soul desires)

 

Let’s make it!

  1. Cook the rice and let it cool slightly.
  2. Marinate the salmon: In a bowl, combine cubed salmon with sesame oil, soy sauce, honey, garlic, green onions, onion powder, and paprika. Mix well and let it sit for a few minutes.
  3. Cut the nori sheets into squares (big enough to line muffin tin cups). Scoop about 1 tbsp of rice onto each nori square and gently press them into a greased muffin tin. 
  4. Top each rice cup with a spoonful of marinated salmon.
  5. Bake in a preheated oven at 400°F (about 200°C) for 16 minutes, until the salmon is perfectly cooked and slightly caramelized.
  6. While they’re baking, make your spicy mayo: Mix ¼ cup mayo with sriracha to taste. Creamy, spicy, dreamy.
  7. Once the sushi cups are out of the oven, top them with thin avocado slices and a generous drizzle of spicy mayo.

🍙 Don’t overfill the nori!
Just about 1 tablespoon of rice is perfect. Too much and your cups might fall apart or get soggy.
