Stinging Nettle Cake

Stinging Nettle – The kitchen allrounder

The stinging nettle is a very ancient superfood but very neglected. Not only it has a big variety of nutrients, but when cooking also very versatile. The best? You can find it everywhere.

Everyone has already touched a stinging nettle (Urtica dioica) in his lifetime and can remember the feeling of burning skin, but did you know that the stinging nettle has been used from our ancestors not only as a food resource but also as medicinal herb? Here’s a short list of the properties and benefits, keep in mind there are even more properties and benefits to every plant and herb I post.

You may have heard that you can eat the stinging nettle as a soup or as a stew, but you can create numerous recipes with the nettle, since the taste is similar to spinach. Here are some ideas how you could use the nettle: Quiche, omelet, strudel, smoothies, sauces, warm/cold tea, aroma for beer. This are just some ideas, I’m sure you could come up even with more.

The Sweet Edition

Recently I wanted to challenge myself a bit, and I was wondering what wild plant can be used to create a sweet recipe, since I wanted to create a special cake for mother’s day. I actually saw some time ago a recipe for a nettle and lemon cake with buttercream, but since I like rather simple cakes, without buttercream and too much sugar, I adapted the recipe a bit. Since the recipe is still in process, I will probably update you sooner or later on some modification I made.

Check out the video to see the complete recipe, starting from the harvest.

I hope you enjoyed reading this post and I will definitely post a salty nettle recipe. Since it’s my first recipe video, I would appreciate some thoughts if this was useful for you, don’t be too harsh on me.

And let me know if you tried out the recipe how it went!
