As the weather slowly starts to warm up, it’s time to get ready to host your guests on your balcony or in your garden. Don’t worry—I’ve already started preparing delicious recipes, so you don’t have to stress and overthink, “What should I cook with the wine 🍷?“
I’m launching my blog with a mouthwatering appetizer: shrimp and avocado bites that pair perfectly with a chilled glass of Sauvignon Blanc. Get ready to welcome sunny days ☀️ with creamy avocado, garlicky shrimp, and crunchy crackers!
Ingredients
For the Garlic Shrimp 🍤
- 400 grams shrimp (peeled)
- 3 cloves garlic (minced)
- 1 tbsp smoked paprika
- ¼ tsp salt
- ¼ tsp ground black pepper
- 1 tsp dried oregano
- 2 tbsp butter
- 1 tbsp parsley (chopped)
For the Guacamole 🥑
- 2 ripe avocados
- 1 tomato (finely diced)
- 1 jalapeño pepper (finely diced)
- ¼ cup cilantro (chopped)
- ¼ small onion (finely diced)
- ½ lime (juiced, plus more as needed)
- ½ tsp kosher salt (plus more as needed)
Instructions
First, place the cleaned shrimp in a deep bowl and add the spices (smoked paprika, dried oregano, salt, and black pepper). Mix well and let it marinate in the refrigerator for 15 minutes. If you have extra time, you can let it sit longer, but it’s not necessary. 🙂
While the shrimp is marinating, let’s prepare the guacamole. Cut the avocados in half and remove the pit. Scoop out the avocado with a spoon and transfer it to a medium mixing bowl. Mash it with a fork or a potato masher until you reach your desired consistency—I recommend making it as creamy and smooth as possible. Stir in the chopped cilantro, tomato, onion, lime juice, jalapeño, and salt. Pro tip: Chop the tomatoes, onions, and jalapeño as finely as possible without crushing them. Taste and adjust the seasoning if needed.
Now, let’s return to our shrimp. Heat some olive oil (or vegetable oil of your choice) in a pan and sauté the shrimp on both sides until they turn pink. Then, add the garlic and butter. If you’re not a huge fan of garlic, you can reduce the amount, but I highly recommend keeping it in. 🙂 Continue cooking until the garlic is fragrant and the butter is lightly browned—just be careful not to burn it! Finally, sprinkle some parsley, and our shrimp is ready.
Now, simply spread some guacamole on your favorite crackers, top them with the garlic shrimp, and enjoy! These shrimp bites are ready to be served. Just don’t forget to save some for your guests!
