Crispy Garlicky Spinach Bites – Wine & Bite

Why You’ll Love This Recipe

  • It’s no-cook and super quick.

  • It looks chic on any table.

  • It’s super refreshing for warm days.

🍷 Why It Pairs Perfectly with Sancerre (Sauvignon Blanc)

  • Bright acidity cuts through the creaminess of avocado, refreshing the palate with each bite.

  • Citrusy and green apple notes echo the cool crispness of cucumber, enhancing its freshness.

  • Mineral undertones complement the salty, smoky flavor of the salmon without overpowering it.

  • Herbaceous character (like hints of fresh herbs or green asparagus) mirrors the green onion garnish and blends beautifully with creamy elements.

  • Overall: it’s a clean, elegant pairing that elevates the dish without overshadowing its delicate balance.

🛒 Ingredients

  • 1 cucumber (sliced into thick rounds)

  • 1 ripe avocado

  • 2 teaspoons crème fraîche (or herbed crème fraîche, or cream cheese)

  • Smoked salmon slices

  • Green part of spring onions, finely chopped

  • Low-sodium soy sauce (for drizzling)

Optional toppings:

  • Seaweed flakes

  • Toasted sesame seeds

👩‍🍳 Instructions

  1. Prepare the base: Slice the cucumber into thick, even rounds. These will serve as your bite-sized bases.

  2. Make the avocado cream: Mash one ripe avocado until smooth. If you prefer an ultra-creamy texture, you can use a blender. Mix in about 2 teaspoons of crème fraîche (or substitute with herbed crème fraîche or cream cheese).

  3. Assemble the bites: Spoon avocado mixture onto each cucumber slice.

  4. Add the salmon: Place a small piece of smoked salmon on top of the avocado.

  5. Garnish: Sprinkle with finely chopped spring onion greens.

  6. Final touch: Drizzle a few drops of low-sodium soy sauce over each bite. For an extra layer of flavor and texture, you can also top them with seaweed flakes or toasted sesame seeds.
