They’re flaky, gooey, slightly sweet, and just a little bit fancy—perfect for your brunch table, as a pre-dinner appetizer, or even a cozy solo snack with a glass of wine. Speaking of which…Pairing them with a crisp, chilled glass of Chardonnay takes this experience to a whole new level. Let’s get into all of it!
🍷 Why It Pairs Perfectly with Chardonnay
Brie is naturally rich and buttery, with a mild earthiness that pairs beautifully with something that can cut through its creaminess.
Enter: Chardonnay. Especially one that’s lightly oaked.
- The acidity in Chardonnay balances the fat of the cheese.
- The subtle fruitiness (think green apple, pear, citrus) complements the raspberry jam.
- And if you go for a lightly oaked variety, the toasty notes echo the baked puff pastry beautifully.

📝 Ingredients:
- 1 sheet of puff pastry (thawed if frozen)
- 150–200g brie cheese
- 2 tablespoons raspberry jam
- 1 egg yolk (for brushing)
- A small handful of slivered almonds (optional but recommended)

- Prepare Your Pastry:
Lay your puff pastry flat on a baking tray or parchment-lined surface. Let it soften a bit if it’s too cold—it’ll be easier to handle. - Mash the Brie:
Cut the brie into small pieces and mash it with a fork until creamy. You can use a food processor too if you prefer a smoother texture. - Spread the Goodness:
Spread the mashed brie over half of the pastry.
Add small dollops of raspberry jam on top—but go easy on the jam! Too much will overflow during baking. - Fold and Cut:
Fold the other half of the pastry over to cover the brie and jam.
Slice into 6 equal squares, then cut each square into finger-width strips. - Twist It Up:
Gently twist each strip into a spiral shape. This gives a lovely texture and golden finish. - Brush and Sprinkle:
Brush the tops and sides with egg yolk. Sprinkle over the slivered almonds for that perfect crunch and visual flair. - Bake:
Bake in a preheated oven at 180°C / 350°F for 30–35 minutes, or until golden brown and puffed.
