Missing Salmon: A Vegan’s Dilemma
As I journey deeper into the realms of veganism, there’s one dish that still tugs at my heartstrings: salmon. The pink flesh, the delicate flavor, the versatility in recipes – it’s a seafood lover’s dream. Yet, despite my longing for this oceanic delight, there’s a stark reality I can’t ignore: the environmental impact of salmon consumption.
Salmon, once abundant in the wild, is now predominantly farmed to meet the ever-growing demand. These fish farms, however, come with a host of environmental issues. From pollution and habitat destruction to disease outbreaks and the depletion of wild fish stocks, the negative consequences of salmon farming are undeniable. As someone who cares deeply about our planet, I can’t turn a blind eye to the damage caused by my culinary cravings.
But fear not, fellow food enthusiasts, for where there’s a craving, there’s also innovation. In my quest to satisfy my salmon hankerings while staying true to my values, I’ve discovered a delightful alternative: tofu and nori-based vegan salmon. Yes, you read that correctly – a plant-based rendition that mimics the taste, texture, and appearance of traditional salmon, all without harming our oceans.
This vegan salmon alternative is not only delicious but also environmentally friendly. Tofu serves as the perfect base, providing a neutral canvas for absorbing flavors and achieving that flaky texture reminiscent of the real deal. Wrapped in nori sheets and seasoned with a blend of herbs and spices, this vegan creation captures the essence of salmon while leaving a lighter ecological footprint.

Here´s the recipe:
Salmon ? ?:
? 300 g tofu (two blocks)
? 300 ml cucumber broth
? 1-2 tbsp white miso
? 2 nori leaves
? 2-3 tbsp beet juice (depending on the color you want to achieve)
? 2 tbsp soy sauce
? 1 tsp onion powder
? 1 tsp garlic powder
? 1 tbsp cornstarch
? vegan butter as you like
Sauce ?
? 30 g vegan butter
? 1 tbsp flour
? 2 nori leaves
? 1-2 tbsp white miso
? 1-2 tbsp soy sauce
? 100 ml cucumber broth
? 1-2 tsp vegetable broth
? 1 tsp garlic powder
? 1 tsp onion powder
? 150 ml vegan cream (soy or oat works best)
? 175 g vegan crème fraîche
? salt and pepper as you like
(? you could also add 100 ml vegan white wine)
Instructions
- Start by slicing the tofu block in half and making cuts 1–2 mm apart on the top of the fillets to replicate the texture of salmon.
- Next, blend together cucumber water, nori leaves, white miso, soy sauce, garlic powder, onion powder until finely chopped. Add beet juice until the marinade turns into the desired color.
- Pour the marinade to a small saucepan and heat it up. Place the tofu fillets in the saucepan and simmer on medium heat for about 10 minutes, ensuring that the marinade seeps into the cuts of the fillets.
- Once done, remove the fillets from the pot and let them drain slightly. Dust the underside of the fillets with a bit of cornstarch.
- In a separate pan, heat some butter and fry the fillets from all sides until golden brown.
- While the tofu cooks, prepare the sauce. Melt vegan butter in a saucepan and stir in flour until combined. Rip the nori leaves apart and add it to the butter mixture. Quickly add white miso and soy sauce, then deglaze with cucumber broth. Pour in vegetable broth, onion powder, garlic powder, vegan cream, and vegan crème fraîche, and let it simmer on low heat for 10–15 minutes. Season with salt and pepper to taste.
Serve the tofu salmon-fillets, generously drizzled with the sauce.
